It’s been a while…

Since I had a chance to blog.

In the meantime we’ve moved into our new digs, although we are not yet fully unpacked. I’ve joined the local gym and gone once, Papaya ran away from me when I went to pick her up which means she loves it there. Adventure Dad is working, no surprise, long hours. I’ve found a great grocery store, Wegmans, where I spent lots of time and money.

I was VERY proud of tonight’s dinner that came out tasting, as I had hoped, a lot like the “Chinese Style” preparation for fish from my favorite restaurant Buzz’s Steakhouse in Kailua.

I went without recipe, so I’ll just give you what I can remember:

2 Fresh Swordfish Filets
4 Green Onions
1 Shallot
2 cloves Garlic
2 inches Fresh Ginger
1 Tbs. Minced Garlic
1 Tbs. Minced Ginger
Low Sodium Soy Sauce
Mirin (Sweet Rice Wine for Cooking)
Sesame Oil

I marinated the filets in 2 chopped green onions, the minced garlic and ginger, soy sauce (1/2 a cup or so), a splash of Mirin and a splash of Sesame Oil and water to make the mixture cover the fish. After about 4 hours I strained the marinade into a saucepan and reduced it for a sauce, I added a bit of flour and butter to thicken it up. I placed the fish in a steamer and put in the basket under it; 2 green onions, 2 cloves garlic, 2 inches fresh ginger all chopped large. I steamed it with water for about 20 minutes, then five minutes later on to heat it back up when Adventure Dad got home. I served it with sticky rice, steamed carrots and snow peas and the sauce!

It was SOOO good and moist and tasty…This is going to be a regular at our house!

    Yay! So glad to get an update. And yum - but no swordfish for me.

    Yeah, I was thinking of that…I wonder what else might work with these flavors? A firm tofu might get the great flavors, but it is my understanding that most vegetarians are sick of tofu at this point….

    It must feel so good to be settling into your new place!

    And YUM! I can’t wait to try this dish. Swordfish happens to be one of my favorites. I’ll have to send you a recipie I tried a month or two back - it was an Indian spice encrusted Salmon. Divine.
