As she eats breakfast…

I read my friend’s blogs….two of whom are going to pop any minute now with babies! One is a boy, and one is a frog (nic name). I’m very excited to see the pictures and each morning I look, excited, and when there is no post…I wonder. This reminds me of a dear friend Amy who I spoke to last week when she was 40 weeks 4 days pregnant with #2, she never called me back the next day and it’s been a week….I sent flowers! Of course, she had the beab! Also, I get to call and talk to my friend Monica who has a newish baby who she had at home a month or two ago….so much fun.

Anyway, reading all my blogs and Mommy boards this morning, my face hurts from smiling so much.

I’m off to have breakfast with Julie and Makenzie and Papaya…what fun!

Like Maggie Gyllenhaal who nurses her 8 month old daughter in public and KNOWS it's not a big deal - I mean AAP says a MINIMUM of a year so why is 8 months SO shocking?Like Joley Fisher who had a homebirth and did not hide it like some pariah - her body did what it's meant to do in a place where fewer interventions lowered her risk of complications.

I’m going to be like Tom Cruise

and get Invisalign Braces! I’ve got some teeth tipping in at the middle of my lower mouth and a bit of crowding at the front, nothing that 20 weeks of braces can’t fix! I’m excited as the tipping teeth had me a bit worried, although it seems to be genetic, it is nice to know I can fix them! Maybe when it’s all over, out of my own pocket of course because United Concordia sucks, I’ll spring for some teeth whitening to take care of those years of smoking in my youth….

In other news, Papaya had her check up today and is 32 inches tall, 24 pounds and 9 ounces and healthy as a one-year-old drama queen!

It’s a special day

Today, Papaya went to the Doctor without crying. I think having a female Dr. scares her less as she gets into the scared-of-stranger phase. Don’t get me wrong, I LOVED Dr. Brown in Poulsbo, but Papaya’s little fits were starting to get on my nerves at the visits. Today we met Dr. Shoshana, I think it is cute that the Dr.s in this office go by first names. AND she was supportive of breastfeeding which is, lately, a miracle!

On a more special note, Adventure Dad came home from work at 4:30 p.m?!?! My friend Donna suggested I write this date down for the records, an amazing day! It won’t repeat tomorrow of course, but I did get a chance to come on here and blog, do a bit of digital scrapbooking (http://web.mac.com/tkpetzoldt) and make supper. I’m off to see what the two of them are doing downstairs with Jimmy Buffet blaring on the stereo.

Brie-and-Caramelized Onion-Stuffed Chicken Breasts

Tonight’s dinner:
From The Complete Cooking Light Cookbook

Although this elegant dish is low on calories, the melted Brie-and-onion combination creates a rich-tasting, butter consistency.

1 teaspoon olive oil, divided
1 1/2 cups sliced onion
4 garlic cloves, thinly sliced
2/3 cup dry white wine, divided
2 ounces Brie or Camembert cheese, rind removed and cut into small pieces (about 2 tablespoons)
1/8 teaspoon salt
1/8 teaspoon pepper
4 (4-ounce) skinned, boned chicken breast halves
2 tablespoons minced onion
1 tablespoon chopped fresh or 3/4 teaspoon dried rubbed sage
2 garlic cloves, minced
1 (10 1/2-ounce) can low-salt chicken broth
Sage sprigs (optional)

Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add sliced onion; sauté 30 minutes or until golden brown. Add sliced garlic; sauté 5 minutes. Stir in 1/3 cup wine; cook 5 minutes or until liquid almost evaporates. Spoon onion mixture into a bowl; let cool. Stir in Brie, salt, and pepper.

Cut a horizontal slit through the thickest portion of each chicken breast half to form a pocket. Stuff about 1 1/2 tablespoons of the onion mixture into each pocket.

Heat 1/2 teaspoon oil in skillet over medium-high heat. Add chicken; sauté 6 minutes on each side or until chicken is done. Remove chicken from skillet. Set aside; keep warm.

Add 1/3 cup wine, minced onion, sage, and minced garlic to skillet. Cook over medium-high heat for 2 minutes. Stir in broth. Bring to a boil, and cook 7 minutes or until reduced to 3/4 cup. Return chicken to skillet; cover and simmer 2 minutes or until thoroughly heated. Serve sauce with chicken. Garnish with fresh sage, if desired.

Yield: 4 servings (serving size: 1 chicken breast half and 3 tablespoons sauce)

As a side dish I diced a potato and four sunchokes and roasted at 450 degrees for about 30 minutes (tossed in olive oil, salt, and pepper). Darn this was a good side dish.

Now we are just waiting on time to put together Adventure Dad’ office and Papaya’s room system from Pottery Barn Kids. Oh, and hang the art I bought too.

This weekend includes plans for a BBQ and finishing up taxes.

Furniture woes

On the 24th of last month I ordered A LOT of furniture from Ikea…

I’ve been calling and emailing regarding the status of my order.

I finally got a (friendly) human on the phone today only to find out that a mistake in the system had cancelled my order.

I’m so pissed my face is red. And of course, Adventure Dad is working late tonight.
