Well….it’s Monday but it’s Labor Day so we’ve been quite lazy about cooking and are eating a bunch of leftovers.

Tonight I’ll make pasta tossed with cannellini beans (I pressure cook them from dried in chicken broth - less salt than when you buy canned), spinach and asiago cheese. One dish simplicity.

Tuesday - Turkey Bolognese

Wednesday - leftover Bolognese in Sandwiches that include the thickened sauce, fresh mozzarella, roasted red peppers, basil and balsamic glaze.

Thursday - Quick Coq au Vin (I’m going to use more of that Black Forrest Bacon from Whole Wallet Foods)

Friday - Chicken Salad made with leftover Chicken from Coq au Vin, raisins, apples, carrots and some fat free mayonnaise - and a lot of curry powder because I love it.

Saturday - We have a wetting down for one of Travis’ former boss so we’ll eat there!

Sunday - Spicy Noodles with Pork although I’ll probably hold back a bit on the red pepper and use the 1/8 tsp instead of 1/4 to make sure Papaya can enjoy it with us. The girl loves noodles almost as much as her Mom!

    Nice variety in your menu.

    Chicken salad sounds good. I have some extra chicken this week so I think I’ll try it. I’ve never had fat free mayonaise. Been tempted to try but wasn’t sure what the taste was like.

    I’m a huge fan of the one-dish simplicity! I do it a lot with stir fry and pasta dishes, making sure I get all the food groups in there.

    I love how you think ahead and use pieces of the former day’s meals in the next. This is always something I’ve admired, and aspired to do myself, but have never quite gotten the hang of. It’s also much more satisfying cooking for a family than just for your lonesome self, when a mish-mosh of fridge findings will do just as well.
