Chickpea (Cutlet) Heaven

The hype is big and I was very excited to make the most popular recipe to come out of Veganomicon.  Oh dear are these good - too bad I had no plan other than to make them (the baked variety).  I made a bunch to freeze and eat throughout the week. Now, after serving them sliced with ketchup for dipping (Papaya) and diced with pasta, asparagus and basil (me) I have bagged them up and have all sorts of great ideas for the six I’ve got left (I made a double batch).

Vegan food is good people, I swear.

    I’m not all thoughout Vegan but I enjoy being most of it. I happen to bump into this niche of yours and I’m amaze. You call your daughter Papaya. :-) That’s really cute.
