Gone Vegan.

I read a book as a fell asleep one night last week, woke up sure that I would spend the next year eating a vegan diet (possibly longer). My primary reasons are health and of course there are follow on reasons (ethical, environmental) that come with research. Please, don’t take this as a judgment of anyone else, this is what is right for me at this time in my life and I’m enjoying it to the hilt.

For example - my house smells amazing right now as I’m using up last week’s leftover butternut squash in Spicy Arabian Butternut Soup. It smells so good I can hardly wait for lunchtime! I’m watching the front door like a crazy woman waiting for what I’m sure will be my new cookbook obsession - Veganomicon. I am very lucky o be living in Hawaii where the ability for such a varied diet is here year round, and to be somewhere that Dr. Shintani has blazed the way and made healthy food available in some of our local restaurant chains.

Think I’m destined to a life of salads? Look here! I’m feeling great - lowering my cholesterol, cancer risk, diabetes risk, the list goes on and on and on.

    Yummy food pics! My mouth is watering.

    Have you read “An Omnivore’s Dilemma”? It’s sitting on my nightstand currently and I haven’t read it yet, but my SIL is a vegetarian after reading it. But then again, I tried vegetarianism for 3 months in college and almost drowned in my own drool every time my (now) hubby would cook up chicken diane.

    What book did you read? And do you think Adventure Dad will be on board with this? The reason i ask is I sooooooooo badly want to go veggie (not ready to give up my real dairy yet) but Kyle really, really loves his red meat. I don’t know if I am woman enough to make dinner for a meat eater, a non-meat eater, and the pickiest preschooler in Texas . . . *sigh*
