Monday - New Year’s Day! Leftover Phyllo-Free Spanikopita my Mama made :)

Tuesday - Date night with Adventure Dad!!!

Wednesday - Adventure Dad’s last night home, so we’ll have Fish since thats what he’s in the mood for. He’s less than impressed with the deep-fried cod of England so we’ll do some Mahi Mahi steamed in soy sauce, ginger, garlic, brown sugar, green onions and dark sesame oil served with rice and a salad!

Thursday - Spaghetti for Papaya and I

Friday - Book Club! One of our members won a $75 in free Pizza from a local place so we’ll be knee deep in pizza including Kalua Pig and BBQ which is divine!

Saturday - Skillet Strata with Cheddar and Thyme (from my new gift cookbook! Thanks S & E )

Serves 6 to 8

Do not trim the crusts from the bread or the strata will be dense and eggy. Using a 10-inch skillet is crucial for the thickness and texture of this dish.

4 tablespoons unsalted butter
1 onion, minced
Salt and ground black pepper
6 large eggs
11/2 cups whole milk
1 teaspoon minced fresh thyme
1 cup shredded cheddar cheese
5 slices high-quality sandwich bread, cut into
1-inch squares

1. Heat oven and Cook Onion: Adjust oven rack to middle position and heat oven to 425 degrees. Melt butter in 10-inch ovensafe nonstick skillet over medium-high heat, swirling to coat skillet, until foaming subsides. Add onion and 1?2 teaspoon salt and cook until onion is softened and lightly browned, about 6 minutes.

2. Combine Egg Mixture: Meanwhile, in large bowl, whisk eggs, milk, thyme, and 1?4 teaspoon pepper together, then stir in cheese; set aside.

3. Toast Bread: Add bread to skillet and, using rubber spatula, carefully fold bread into onion mixture until evenly coated. Cook bread, folding occasionally, until lightly toasted, about 3 minutes.

4. Add Egg Mixture: Off heat, fold in egg mixture until slightly thickened and well combined with bread. Gently press on top of strata to help it soak up egg mixture.

5. Finish In Oven: Bake until edges and center are puffed and edges have pulled away slightly from sides of pan, about 12 minutes, and serve.

Well….it’s Monday but it’s Labor Day so we’ve been quite lazy about cooking and are eating a bunch of leftovers.

Tonight I’ll make pasta tossed with cannellini beans (I pressure cook them from dried in chicken broth - less salt than when you buy canned), spinach and asiago cheese. One dish simplicity.

Tuesday - Turkey Bolognese

Wednesday - leftover Bolognese in Sandwiches that include the thickened sauce, fresh mozzarella, roasted red peppers, basil and balsamic glaze.

Thursday - Quick Coq au Vin (I’m going to use more of that Black Forrest Bacon from Whole Wallet Foods)

Friday - Chicken Salad made with leftover Chicken from Coq au Vin, raisins, apples, carrots and some fat free mayonnaise - and a lot of curry powder because I love it.

Saturday - We have a wetting down for one of Travis’ former boss so we’ll eat there!

Sunday - Spicy Noodles with Pork although I’ll probably hold back a bit on the red pepper and use the 1/8 tsp instead of 1/4 to make sure Papaya can enjoy it with us. The girl loves noodles almost as much as her Mom!

We still eat

here and there, even when I don’t menu plan on Mondays. It’s been a busy week with most of my focus on my upcoming move and such.

BUT…tomorrow we are having Ponzu Grilled Salmon with Golden Beet Couscous and Friday we are having Shrimp Florentine with Caramelized Garlic. AND…..with the abundant crop of bright orange apricots from the farmers market we are having Fruity Apricot and Nutty Pistachio Ice Cream as well!

THEN…we are off to go camping this weekend for Adventure Dad’ birthday, yes you heard it here first, I am going camping again with Adventure Dad and it’s going to be a long time before I do it again. He’s lucky it’s his birthday. Did I mention he wants to use the same 2-man tent even though Papaya has her own sleeping bag? Damn this is going to be fun.

Meal Planning Monday

Monday - we will eat out at Whole Foods Tonight while I grocery shop :)

Tuesday - Turkey Enchilada Casserole with a salad and beer for the guys (Kea and Brandy will be in town so I’m sure Adventure Dad/Kea will enjoy some beer.

Wednesday - It’s Fourth of July and we are going to the Pentagon party area (okay, it’s a parking lot) where we can see DC fireworks and possibly a peek at the ones in Alexandria, VA! I think we’ll take Chicken-and-Brie Sandwiches with Roasted Cherry Tomatoes and some chips, drinks, etc.

Thursday - Turkey Bolognese because I love turkey, or at least it’s high protein low fat qualities.

Friday - Date Night!!!! I think we might go to the Melting Pot.

Saturday - a tradition from my childhood that I want to recreate with Papaya & Adventure Dad Breakfast for Dinner Baked Pancake with Raspberry Sauce and Huevos Racheros

Monday - we ate frozen Pizza, mine was Lean Cuisine and Adventure Dad/Papaya shared a larger one.

Tuesday - Rainbow Fried Rice

Wednesday - Antipasto Chicken Sandwich

Thursday - Curried Salmon Cakes

Friday - DATE NIGHT!

Saturday - Mexican Pizza

Sunday - Parmesan Chicken and Rice which we’ve had before and is SOOOOO good.
